National Pancake Day

First of all, allow me to apologize for the lack of pictures. I made the mistake of announcing dinner before taking pretty pictures.

IHOP began National Pancake Day for Children's Miracle Network. That is a great cause, but I will not eat IHOP foods. Some in our family have gluten and dairy allergies. So, making it homemade was the best decision. This is what I did:

  • Put on an apron. I got this last weekend with some Christmas money from my parents. You'll need to keep your cute clothes from being splattered on by the blueberry syrup.
  • Preheat the oven to 375 degrees and place turkey bacon on a jellyroll pan covered with aluminum foil. Bake for 9 minutes. It took quite awhile as I make 2 packages and only 1/2 a package will fit on the pan.
  • In a huge Pyrex measuring cup or bowl mix together Pamela's Baking Mix.
  • In a 2 qt. heavy pan (I used cast-iron) put 1-2 cups of frozen berries (I used blueberries) & 1/2 cup sugar. Bring to a boil and stir frequently for a few minutes. Once it's soft, add about 1 tablespoon cornstarch to thicken. Continue to cook until it's a syrup, with lumps. 
  • In a skillet or griddle (need one!) put in 1 tablespoon butter and turn the burner on medium- medium high. Using a 1/4 cup measuring cup, drop into the skillet. Cook until slightly bubbled and sides are "thick"; flip and cook for 2 minutes. Place the pancakes on a plate and start over again. 
  • In a Pyrex cup, fill up to 1 cup line of maple syrup and warm in the microwave, or if you want, on the stove.
  • If you have whipped cream, get it ready.
  • Pile your plates (we all ate 3 pancakes!).
Sit at the table with a tablecloth, napkins, silverware, and cocoa and enjoy your family. Unplug and enjoy each other!
