Almost Caprese

B and I went to Trader Joes on Saturday to get some groceries. It was our 3rd store and I was feeling some definite pinching and soreness in my back, so needless to say, I was ready to go home. In all of the hubbabaloo I forgot to get mozzarella for our Caprese salad. Oopsie Daisy! I contemplated sending my husband to the grocery but just decided to create my own version. 

2 tubs of cherry tomatoes, halved
1 large bunch of fresh basil, cut in ribbons
Sea salt to desired
1/4 cup olive oil
2 tablespoons balsamic vinegar

Combine in a bowl. Easy peasy!

Without the cheese, I realized it can have more uses, such as:
Combined in risotto
Mixed with onions as topping for turkey burgers
Adds freshness to tomato soup
Add to lettuce and feta and you have a salad
Place on top of grilled chicken

Enjoy summers delicious bounty!

Goings On

As you can see, there have been some changes here on the blog. I had to change my blog name and URL for security reasons. I'm still trying to decide on this name or not. What do y'all think?

We've had lots going on lately. Here is a brief summary:

  • Daughter had wisdom teeth out last week. All but 1 tooth were in so it was a basic extraction, but still required her to eat liquids and soft foods. I will list her favorite smoothie recipe below.
  • Finishing up attendance records and grades from the last school year for homeschool. Animal Farm has taken longer than anticipated!
  • I've had 2 doctor appointments and have 1 more to go on Wednesday so get to the bottom of why I still can't feel my feet.
  • I've finally begun cooking again. It's such a joy now. My sweet husband tried, but we got bored. He's still on turkey burger duty and onion cutting duty though.
  • Preparing oldest son for college; daughter and youngest son for school that begins in a few weeks.
  • Trying to become an extreme couponer. It takes A LOT of time!
  • Reading Charlotte Mason Companion by Karen Andreola at night and Total Money Makeover during the day. That pretty much sums up my life right now. :) 
  • Husband has an interview for the potential for a really good job. I'm really hoping this works out.
Must run to the chiropractor. Here is the smoothie recipe: 1 can coconut milk, 1 cup frozen pineapple, vanilla, shredded coconut. Blend!

Prince Cambridge

Congratulations to Prince William and Catherine of Cambridge! I'm so thrilled for them and their heir. They look so happy as they left St. Mary's hospital. I've been a royal fan since I was a little girl. I actually had a picture of Prince Edward on my wall beside NKOTB. I remember the exact moment that I found out that Princess Diana passed away. I was beyond devastated. I was pregnant at the time so that made it a wee bit worse emotionally. I hope that this baby feels the same love that Diana gave to her sons.

P.S. My husband is BEYOND sick of hearing of this baby...so I may need to keep my posting to here about my excitement! :)

summer is half over

In less than a month all 3 children go back to school. I may not be homeschooling B this year. I'm worried about him going, so I will be praying! 

Yesterday I made a delicious cheese pie with macerated Georgia peaches on top. It was delicious! Here's the recipe: 2 8oz bricks of softened cream cheese, 1 can of sweetened condensed milk, juice of 1 lemon. Combine all ingredients and blend with a mixer until smooth. Pour into a graham or shortbread prepared crust. Chill for 3-4 hours. Take 3-4 room temperature peaches and peel and de-pit them. Place them in a bowl. With a potato masher, mash the peaches. Pour onto the top of the pie right before serving.

Summer Sales

A little business first, since Google Reader has disappeared then please be sure to follow me on Bloglovin' (link on the right) so you don't miss any posts, however intermittent they appear lately. :)

 Even though it's 90's, stores are starting to put their summer items on sale. It's a good time to buy here in Georgia as we have another few months of heat. This cute dress is from the Brooks Brothers sale. I like how it's not too short and covers arms so it can be worn almost year round here.

The Laura Ashley sale is 50% off, but unfortunately you have to pay for overseas shipping. The clothes are not as cute as they once were, but they are flattering for most body types and fairly modest.
Talbots has great shoes. These ballet flats are so comfy and inexpensive. GAP's are cheaper, but they are not as structured.

Anthropologie is having a pretty good sale as well. Isn't this bird shirt adorable? I am not a fan of the shorts, but that's just my opinion.

Happy Independence Day!

I hope everyone is having a joyous Independence Day! Ours is a bit different this year. We usually spend this week with our family in Ohio. Because of my back surgery, I am not able to travel the 10 hours it takes to go. Unfortunately it is raining here in Georgia as well. So, we have completely changed our plans. I'm making the sides for supper while my husband will be flipping the burgers. We are watching a Hallmark Channel movie. AND, I am reading the Declaration of Independence around the dinner table! Since we are home, we can focus more on what this day is about-our freedom from English rule.

I'm making these dishes:
Pioneer Woman's baked beans
Pioneer Woman's peach crisp
Oven baked corn on the cob
Lemon Icebox Pie (tomorrow when we have company)
Publix macaroni salad
Hamburgers with fixings

Latest Francophilian Obsession

It's no secret that I am both an Anglophile and Francophile. I love British literature, tea, television shows, the Royals, Barbour, Sloane Ranger style, etc. However, I love the French way of living, but not the snobs. I enjoy their rituals of living and eating.

Several years ago I read, and continuously listen to on my iPhone, French Women Don't Get Fat by Mireille Guiliano. Then my cousin moved to France. Karyn, someday I will visit you! Anyway, I realized what an elegant and ritualistic society that make up the French way of living...the French Paradox. The women and men are elegant in their movements, clothing, eating, and even in raising of their children.

Though I no longer have little children in the house, I do think the rules listed below are for all ages. Eating real foods (I've had to give up fast food from my surgery and I am so grateful!), eating only at the table, and if you don't like it then don't eat but you won't be given anything else., etc. Americans eat horribly. We are always looking for shortcuts on everything...including things that will hurt our children in the long run.

I was a young mom living in a city where I didn't know anyone so I started going to McDonald's Playplace so that I could have conversations. Then, we moved to a city with both a Chick-fil-A and a McD's. So, more food options and more conversations. We seriously did this 3-4 times per week! At the time, I selfishly didn't think about hurting my child. Bry is still addicted to junk food. He literally will not eat if it's healthy. Over the winter we began eating healthy meals at the table every weeknight. He ate bananas many nights. Bry has gotten down to 131 pounds and he's 5'11. Since my surgery though he has eaten lots of junk food, but has not gained weight. The only vegetables he eats are in the sauce laden chicken stir fry. It's quite sad. So...I've been thinking what to do. Then I found this book at the library.

There's no reason why we cannot incorporate some of these foods. I'd like to go on record as saying that I read Jessica Seinfeld's books about using puree's in her children's foods. I tried it a few times and quite frankly, it was a lot of work. So, I figured I could start making purees as soups as listed in le Billon's book yet incorporate foods that he enjoys as well. We will eat at the table for all meals, which is the hardest for Michaela, as she likes to eat in front of the television. No snacking will also be hard for the children. We've done the whole if you're hungry then grab something. Snacks will only be fruit and cheese, which is perfect to  do now that it is summer.
