Homemade Protein Bars


My husband enjoys protein bars. Many bars on the market are made with deplorable processed ingredients. If you're in a pinch, they are healthier than a Twix, but not by much. I began making my husband's protein bars a few months ago. I make them once a week! He has them with coffee most mornings. This recipe is adapted from the Petite Athlete's Primal Protein Bars.

Preheat your oven to 400. On a rimmed baking sheet put 2C raw mixed nuts and .50C unsweetened shredded coconut. Bake 5-7 minutes or until you start smelling the nuts. Take out pan then turn the oven down to 325.

In a large mixing bowl (I use 8 cup Pyrex) combine:
.50C coconut oil
.50C almond butter (we use Trader Joe's raw crunchy)
Melt in the microwave for 30 seconds; stir to combine.

Once the nuts have cooled slightly, put them in a blender/VitaMixer/food processor and chop but not make into crumbs or paste. Pour this into the bowl. Then add:
8Tbsp. chia seeds
4 large scoops protein powder (we use Chocolate Mint pea protein)
1C craisins or other dried fruit
3 eggs

Stir to combine. Pour into greased dish. Bake for 10 minutes. Allow to set before placing in the refrigerator.
