The last few evenings my husband and I have been going to the river for a picnic dinner. I make dinner at home then we pack it up and go. It's so warm during the day, but after 7 it's not too bad. I hope you take time to get outdoors for just a few minutes a day.

...has been consuming my downtime instead of blogging. Sorry! With school beginning I'm preparing, teaching my sophomore, cooking, and cleaning. So, instead of putting my brain towards what I want to write, I go brainless and peruse Pinterest and Tumblr. Now with Pinterest, I am quite possibly going to find a recipe to try or craft that may peak my interest, so it is at least a little productive. That cannot be said of tumblr. Though my healthy living Tumblr is quite inspiring (and has loads of Duck Dynasty pictures). My lifestyle one is just fluff that I can look at while the rest of the family stares at the Telly.

Visit The Simple Woman for more Daybook's
Outside my window... The sun is going down after a cloudy and warm day.
I am thinking... about how to get my youngest into a Geometry class. I didn't plan on homeschooling him, but since I'm not able to work after my back surgery that he is unable to attend private school. Still, this Mama is not teaching math!
I am thankful... for being able to stand more each day.
In the kitchen... I am following my menu plan. We are having cupcakes that Anne made for our dessert.
I am wearing... Kelly green short sleeve sweater, black silk shorts with nautical flags on them, and black sandals.
I am creating... lesson plans for the rest of the month.
I am going... to sleep right shortly.
I am wondering... if I will lose the rest of my weight. I've lost 40 pounds thus far.
I am reading... Vogue September issue.
I am hoping... to find the best for William for his schooling.
I am learning... to push myself.
Around the house... we have done some organizing and cleaning. The children have new clothes and school supplies.

Photo of my day: This is my great-niece announcing that come December she will be a big sister. This past week we found out we are getting a great-nephew! We are so excited. My niece is a wonderful mother and her husband is so supportive and loving to her and her babies.

With a new school year beginning, I thought it was time to get more organized. I spent a lot of time today going through papers, making lesson plans, and doing many loads of laundry. Tonight, I decided it's time to get back to menu planning. It's so easy for me to do it here and have everything ready to go for the week. This is to share for y'all, but also to keep me accountable! It's still really warm so I only have 1 meal that will be in the oven (salmon). The garlic chicken will be in the slow cooker. Okay, and I'll admit, that I am using Trader Joe's sauces over the chicken. This is just my dinners for the week. I cheat with breakfasts as we do frozen breakfast sandwiches. Lunches are pasta; sandwiches; hot dogs; or sandwiches.
Sunday- Risotto with peas; salad; pudding
Monday- Garlic chicken; broccoli; jello salad
Tuesday- Taco salad
Wednesday- Salmon with Pineapple glaze; couscous; peas
Thursday- Quinoa Greek pasta salad
Friday- Turkey burgers and sweet potato fries
Saturday- Thai chicken curry; rice; stir fry veggies

This is part of my cast iron collection.
This is how I clean mine:
1. Rinse out food.
2. Add water to the pan.
3. Bring the water to a boil.
6. Lightly wipe down with coconut oil.
I am slowly building up my Le Creuset collection, but nothing can beat the durability and economy of traditional cast iron.

Melissa is an Assistant Editor at Victoria Magazine. I have been a Victoria reader since it's inception in the late 1980's as Muzzie was an early subscriber. I've had my own subscription since middle school. Even though I am a subscriber, Victoria has several additional/supplemental editions such as Tea Time, Gardening, and now, Monograms! When I saw that Melissa was having a giveaway for the new Monograms magazine, I was very hopeful that I would win. It's something to occupy my time while being down with back surgery and a virus the last week. You can imagine my thrill when I found out last week that I had indeed won. It arrived in my mail last week. She wrote a nice handwritten note (y'all know how fond I am of those) wishing me speedy recovery.
