Menu Plan Monday


Monday- Quinoa caprese casserole, broccoli, salad

Tuesday- Waldorf chicken salad croissants and lettuce salad

Wednesday- Pumpkin soup, gluten free biscuits, and kale salad

Thursday- Tuna melts and broccoli (sandwich for seafood allergic me)

Friday- Chicken curry, rice, and stir fry vegetables

Saturday- Homemade pizza and spinach salad

Sunday- Kentucky hot browns and some vegetable I pick up on Saturday :)

Breakfasts: eggs and toast; pumpkin over night oatmeal with peanut butter; pumpkin pancakes and bacon; grits

Lunches: Annie's macaroni and cheese with hot dogs; english muffin pizzas; sandwiches with apples; homemade lunchables; soup with crackers

I hope to make some good desserts from Pinterest. I made an apple crisp last night and it was served with organic vanilla ice cream. With 5 adult sized people living here, dessert does not last!

Addiction

This weekend I am taking break from social media so I can catch up on reading. I love to read! With my cold, I did not feel quite like reading and my library books have gotten close to their due date. So, I have been working on getting them read. 

I don't realize how much time I devote to Facebook, Twitter, Instagram, and Snapchat until I go without them, or at least try. Social media fasting is something I thing all people need to try once a month. Like how fasting from food gives your body a break. 

Read, write, draw, call your grandmother, visit a museum, or play tag with your kids. Just say no...

Things I can't live without

First of all, I apologize for my absence. I have had a terrible cold, which though I feel much better, I am on week 3 of no voice and coughing. I cannot post pictures because I am writing this on my phone. Since my husband has been working from home on the desktop and our laptops are being utilized for school (I think there may also be some Netflix watching too). But, here is my list...for now.

Vicks- I put this on my feet at night and cover with socks. It helps with the coughing and leaves my feet soft when I don't use Burt's Bees coconut foot cream. 

Burt's Bees Chapstick. It's the best in my opinion and used constantly!! 

iPhone- it's my lifeline. Sadly. 

Pumpkin Spice iced coffees- my stepson used to work at Starbucks so I would get them for free. When he ceased working there I bought premixed coffee from Target and when that is finished costco carries Dunkin Donuts pumpkin spice. 

Post it tabs- as a homeschooling mother I rely heavily on these to keep me organized.

Ball Heritage mason jars- I got the small blue jars at Target and they are a huge hit in our family. My family loves having sweet tea in them.

Podcast's recommended in last week's Goop. I listen to podcast's at night. It's kind of like having someone read me a story to go to sleep. The New Yorker and Harvest Eating are my favorites.


There's much more but I need to start school with Will. Y'all have a great day!

FOR TODAY

Outside my window... The trees are luch and green. the sun is still peeking through the clouds, and it is still hot.  

I am thinking... about my blessings.

I am thankful... for the birds that come to my balcony every day. They are too cute.

In the kitchen...I am about to make my husband's favorite protein bars, peach crisp, and something for dinner...not sure what.

I am wearing... mint green empire waist dress that has black polka dots and anchors and black capri leggings.

I am creating... lesson plans for the rest of the month.

I am going... to do my kitchen duties, but will not be leaving the house again for the remainder of the day.

I am wondering... if we will go to war over Syria.

I am reading... Vogue Beauty and Enchanted Barn (again).

I am hoping... the girl my son is talking to from CO isn't crazy.

I am learning... to save money on Money Saving Mom. 

Around the house... with 1 child having a cold and both husband and I have sore throats, I'm doing a lot of disinfecting and washing.

Wearing White

We love traditions in the South. I am in my mid-30's so I'm not a beautiful blue haired lady that is set in my ways. I follow the traditional clothing rules set many years ago, I do not wear white below the waist after Labor Day.

Menu Plan Monday, er, Wednesday

Yesterday I told you that on my usual planning days (Sunday and Monday), I did absolutely nothing. Like nothing. I stayed in my pajamas all of Monday. So...I am waaayyyy behind this week. Here is this week's menu plan:

Monday- Chicken curry, rice, and stir fry vegetables

Tuesday- pizza meatloaf cups, spinach and mozzarella ravioli, and kale salad

Wednesday- beans and rice casserole with guacamole, broccoli, gluten free cornbread

Thursday- salmon cakes, corn on the cob, salad

Friday- Moroccan quinoa, salad, french bread

We may be going out of town, but if not we will have turkey burgers and Alexia onion rings on Saturday

Happy Birthday Elizabeth Lee


This is Elizabeth Lee, Muzzie to everyone else. Muzzie was the name she came up with for her grandchildren to call her as she was a young grandmother and there was NO WAY that she was going to be called Grandma, Granny, Nana, etc. That may give you a little indication of Muzzie's character. She is a character. She's told me many times, "Suzie (she hates my first name and calls me by my middle name), I need to write a book. I've got a lot to share. Maybe someday you can help me". Well, unfortunately, with living so many miles apart that never happened. Dementia has ravaged her mind and many days she will not get out of bed. So far when I call, Muzzie always recognizes me. The last time I was up there she recognized my voice but couldn't open her eyes as she had been up for days roaming the halls of her beautiful assisted living facility. Though when I told her I loved her, she said, "I love you too pumpkin".
Look at that bland, disgusting food that she is served. Ewww!

I do hope to write that book for her someday. I think a person that has been married 5 times to 4 different men and raised 10 children, including stepchildren, has a story to tell. It's a good story too. Muzzie is a generous, well-dressed, tempermental, loving, independent, Christian lady. Her 92nd birthday was last weekend. I had hoped to attend her party, but was unable. Still, I know deep down in her heart that she is fully aware that she and my Nana are my heroes. I'm blessed to be their granddaughter.
