Supposedly Gonna Snow

We'll see if anything actually happens. Our schools were let out early or completely closed and the stores were packed. Either way we are going to be good.

Soup does not go very well in my house unless it is freezing out...like it has been this week. Meatless Monday is not easy for me to do for a non-soup loving family. Since it was a bit chilly this week I decided to do a soup for this week's MM. I made it up (and retrospectively should have taken pictures) and threw these items into my Le Creuset pot.

Coconut Vegetable Soup
1 can Rotel, undrained
2 cups mixed vegetables (corn, carrots, lima beans, green beans)
1 can black beans, rinsed and drained
1 can full fat coconut milk
2 bay leaves
2 cans/1 box chicken broth
1 onion
2 garlic cloves

Gather all ingredients in advance! Using a mandolin, put it on the diced side or using a knife chop the onion and mince the garlic; put the onion in the pan with either olive oil or coconut oil over medium heat. After the onions are translucent add the garlic and saute for 30 seconds to 1 minute. Add the rest of the ingredients to the pot and turn down to medium low heat. Cook for minimum of 30 minutes and up to 1 hour. Top with cilantro, sour cream, chopped chicken, croutons, etc. 

Trader Joe's has begun carrying a mix for gluten free corncakes that I just love. It uses stone ground corn and all I add is oil and water. Simple! However, this is a delicious recipe that is from my hometown's newspaper. 

Corncakes
1.5 cups self-rising cornmeal
1.25 cups buttermilk
1 Tbsp. sugar
1 Tbsp. vegetable oil
1 large egg, lightly beaten
vegetable oil for griddle

Combine first five ingredients in a large bowl, stirring just until dry ingredients are moistened. Place enough vegetable oil in a large skillet (cast iron is great) or on a griddle. Heat skillet or griddle over medium heat. For each corncake, pour .25 cup batter onto heated skillet/griddle. Fry for three minutes on each side. Serve immediately.
